Vegetarian Nachos with “Meat”
Nachos don’t have to be boring because you’re vegetarian. If anything, this gives room for creativity and endless possibilities. This nachos with “meat” recipe is one you will want to throw into your meal rotation.
Vegetarian nachos with meat? Sounds crazy, I know. It’s not actual meat but it is hard to tell the difference. Including a meat alternate is not a requirement for awesome nachos but it can help satisfy a craving. You can season it to your liking and add to almost any meal.
We have been vegetarians for almost 4 years. For most of that time our nachos were pretty plain. Recently we stumbled across a vegan ground meat substitute that would we figured would fit perfectly in our nachos.
There are several brands that offer vegan ground. Some can be found in the freezer area while others are located next to the meats.
Another great addition is pico de gallo! It provides freshness and a hint of lime to the meal. You can use store bought pico that can be found in the produce area of most stores or you can make it yourself. Instruction #2 below provides ingredients and preparation directions.
This recipe is flexible and can be adapted to your needs. You can add guacamole, sour cream, salsa and more to make them fully loaded.
Vegetarian Nachos with "Meat"
Ingredients
- 1 pound Vegan Ground Meat
- 1 pound Velveeta cheese cut into cubes
- 1 can Rotel mild
- 1 red onion
- 1 jalapeno
- 2 tomatoes
- lime
- cilantro
- salt and pepper to taste
- Chips
- 1 cup Milk Almond milk
Instructions
- 1. Cook vegan ground meat per package instructions. Use a spatula to separate chunks into crumbles. Set aside.
- 2. Pico de gallo: Chop tomatoes, red onion, jalapeno and cilantro and add to a bowl. Squeeze in one lime then add salt and pepper to taste.
- 3. Add milk to a pot on low heat. Once the milk is warm add the cheese cubes. Stir every few minutes to prevent burning.
- 4. Once cheese has melted, mix in the cooked vegan ground and rotel. Stir until mixture is warm.
- 5. Plate with chips, cheese mixture and pico.
