Vegetarian Nachos with "Meat"

Ingredients
  

  • 1 pound Vegan Ground Meat
  • 1 pound Velveeta cheese cut into cubes
  • 1 can Rotel mild
  • 1 red onion
  • 1 jalapeno
  • 2 tomatoes
  • lime
  • cilantro
  • salt and pepper to taste
  • Chips
  • 1 cup Milk Almond milk

Instructions
 

  • 1. Cook vegan ground meat per package instructions. Use a spatula to separate chunks into crumbles. Set aside.
  • 2. Pico de gallo: Chop tomatoes, red onion, jalapeno and cilantro and add to a bowl. Squeeze in one lime then add salt and pepper to taste.
  • 3. Add milk to a pot on low heat. Once the milk is warm add the cheese cubes. Stir every few minutes to prevent burning.
  • 4. Once cheese has melted, mix in the cooked vegan ground and rotel. Stir until mixture is warm.
  • 5. Plate with chips, cheese mixture and pico.
